Originating from Italy, balsamic vinegars in manufactures from white grapes which are boiled down then fermented over a long time to produce an aromatic rich sweet tasting vinegar with complex tastes. The use of the vinegar depends on how long it is aged for, under six years is normally reserved for salad dressings and other mare aged varieties used in sauces and meat marinates.

Due to this manufacture process balsamic vinegar is often a lot more expensive when compared to regular vinegar. Some varieties cost hundreds of dollars for small bottles, with different colored labels used to signify how long they have been matured for.
