Basil - The King of Herbs
Having been originally grown and cultivated in India and the Asian region, basil is now grown all over the world in warm dry climates.
Often used in Italian and Asian cooking, basil “King of Herbs” is a versatile herb that can liven up any dish. Sometimes called Sweet Bazil, it is great on top of Italian dishes (most notably in pesto) or any dish where oregano could be used.
Basil has a distinct aroma which has been described to me as a cross between mint and tea and is usually added at the last moment in cooking as otherwise the heat destroys the flavour. I would advise against using dried basil as it is a poor substitute for the real thing.
Tip: If you’d like to freeze basil simply blanch it in quickly in hot water before freezing. It can also be stored in the fridge for a short while though is best when served fresh.
