Cheese and Noodle Hot Pot

Ingredients: 225g/8oz flat noodles
1 medium msized onion
25g / 1oz butter
300ml/ 0.5 pint of white sauce
2 level tablespoons of tomato purée
50g/2oz chopped hazelnuts
225g/8oz Cottage Cheese
Salt and Pepper
50g/2oz crumbled Lancashire cheese
sliced tomato and parsley to garnish
  • Cook noodles in boiling salted water until tender. Drain.
  • Chop onion and fry in butter until golden brown
  • Stir cooked noodles and fried onion into sauce
  • Add purée. hazelnuts and cottage cheese
  • mix thoroughly and season with salt and pepper
  • transfer to large heat proof dish and sprinkle with cheese.
  • Cook at 190°C/375°F or Gas mark 5 for 20-25 minutes
  • Garnish with sliced tomatoes and parsley
  • Serve with green vegetables
