Cheese and Noodle Hot Pot
| Ingredients: | 225g/8oz flat noodles |
| 1 medium msized onion | |
| 25g / 1oz butter | |
| 300ml/ 0.5 pint of white sauce | |
| 2 level tablespoons of tomato purée | |
| 50g/2oz chopped hazelnuts | |
| 225g/8oz Cottage Cheese | |
| Salt and Pepper | |
| 50g/2oz crumbled Lancashire cheese | |
| sliced tomato and parsley to garnish |
- Cook noodles in boiling salted water until tender. Drain.
- Chop onion and fry in butter until golden brown
- Stir cooked noodles and fried onion into sauce
- Add purée. hazelnuts and cottage cheese
- mix thoroughly and season with salt and pepper
- transfer to large heat proof dish and sprinkle with cheese.
- Cook at 190°C/375°F or Gas mark 5 for 20-25 minutes
- Garnish with sliced tomatoes and parsley
- Serve with green vegetables
