Chilli Con Carne
This dish is very versatile, I usually make a big batch and freeze several meals worth. Ground beef recipes don’t come much easier than this, it can be served with rice, or as part of fajitas. I often have it with a garlic and coriander nan bread.
| Ingredients: |
| 500g (16 oz) ground beef |
| 300ml (half pint)beef gravy (eg bisto) |
| One large chopped onion |
| One teaspoon mixed herbs |
| One can of kidney beans (drained) |
| One can of tomatoes (or several fresh tomatoes) |
| One teaspoon of tomato purée |
| Quarter teaspoon of paprika |
| Several fresh Chillies (chopped) |
| Worcester sauce |
| 150g/6oz chopped mushrooms |
| One large green pepper (chopped) |
- Fry the large chopped onion in one tablespoon of olive oil, add the ground beef and cook until it browns.
- Transfer to a pan
- Add the can of tomatoes and the purée(or several fresh tomatoes)
- Add the kidney beans, gravy, paprika, chillies, green pepper, mushrooms and a shake of worcester sauce
- Stir well until it boils, then turn the heat down and simmer for at least 1 hour
