Lobster Newburg
Lobster Newburg is one of my favourite seafood dishes, perfect for that special occasion.
| Ingredients: | 2 cooked lobsters (500g/1lb) |
| salt and freshly milled pepper | |
| 75g/3oz butter | |
| 5 tablespoons dry sherry | |
| 150ml (1/4 pint) of double cream | |
| 3 egg yolks | |
| 225g/8oz boiled rice (100g/4oz raw) | |
| Paprika for garnish |
- Half lobsters along length and discard stomachs
- Remove the meat and cut into neat cubes
- Season with salt and pepper, then fry gently in butter for 4-5 minutes
- Pour in Sherry, then simmer slowly until it has reduced by 50%
- Put in cream, egg yolks into double saucepan
- Cook until it is thick enough to coat a wooden spoon (Don’t Let it Boil)
- Arrange the rice on 4 hot serving plates
- Place lobster meat and liquor from the pan into the center of each plate
- Pour the cream and egg yolk sauce over each
- To finish off, sprinkle lightly with paprika.
