Lobster Thermidor

Of all the red lobster recipes, lobster thermidor is one of the easiest to make, and it tastes delicious.

Ingredients: 2 Red lobsters (cooked) (500g/1lb)
300ml (half pint) of fresh Béchamel Sauce
3 tablespoons of double cream (fresh)
1 level teaspoon of dry mustard
6 tablespoons of finely grated cheese
Salt and pepper
  • Half the red lobsters length wise and discard the stomachs
  • Remove meat and cut into cubes
  • Combine the sauce with cream and mustard
  • Heat though gently and season to taste
  • Cover the base of the lobster shells with a little sauce
  • Arrange th elobster meat on top
  • Coat with remaining sauce
  • Sprinkle with cheese
