If you’re wanting a low fat, high protein diet then chicken and pork tender loin are the best meats.In a low carb diet it is important to maintain a balanced and healthy diet, that includes eating fruit and veg for vitamins and fibre. Good fruits include Oranges, lemons, strawberry’s and peaches (fruits such as bananas, pears, etc contain a significant amounts of carb’s). Vegetables that are low in carb’s include Spinach, Celery, Cabbage and broccoli (Corn, Parsnips, pumpkin, squash all have high carb values).

Mouthwatering Grilled Chicken Recipe
| Ingredients: | 4 medium fillets |
| 3 tablespoons olive oil | |
| 1 tablespoon of lemon juice | |
| 1/4 of a teaspoon of paprika | |
| 1/4 of a teaspoon of mixed herbs | |
| Pepper for seasoning |
- Bruch the chicken with some of the olive oil.
- Mix the paprika, herbs and pepper. Sprinkle mixture over the chicken.
- Add the lemon juice to the remaining olive oil.
- pour rest of oil lemon mixture over the chicken.
- Grill under a moderate heat until the chicken is cooked though (10 - 15 minutes).
Yummy Chicken in Lemon Sauce
Low carb recipes don’t come much tastier than this, I suggest serving it with some cauliflower which has a low carb content.
| Ingredients: | 4 medium chicken pieces |
| 1 egg | |
| 3 tablespoons of double (heavy) cream | |
| 1/2 cup whey flour or protein powder | |
| 1/2 cup Parmesan cheese | |
| 1 chicken bouillon cube | |
| 1 cup of chicken stock (oxo) | |
| 1/2 cup of white wine | |
| 1/4 cup of lemon juice | |
| Parsley | |
- Combine the flour and parmesan cheese
- Whisk the egg and 1 tablespoon of the cream in a bowl.
- Dip the chicken fillets in the egg mixture then into the flour cheese mixture
- Fry the chicken filets in some olive oil, just enough to sear the juices in.
- Remove from the frying pan into a casserole dish
- Dissolve the bouillon into the chicken stock (in a pan)
- Add the cream, lemon juice and wine
- Bring the mixture to the boil (stirring continuously)
- Pour the sauce over the chicken then put in preheated oven at 180°C/°F/Gas Mark 4.
- After one hour it should be ready to eat. Use the parsley as garnish.
Lime and Herb Chicken Marinate
Simply coat your chicken fillets in this marinate (leave for at least a few hours) and then grill for the perfect low carb recipe
| Ingredients: | 1/2 tablespoon of fresh lemon juice |
| 2 gloves of garlic crushed or finely chopped | |
| Soy sauce | |
| chopped spring onion | |
| Olive oil | |
| freshly milled black pepper. |

Cauliflower Cheese Recipe
| Ingredients: | 15g/0.5 oz of Low Carb Flour (Low Carb Diet Chefs flour blend) |
| 300ml/ half a pint of milk | |
| small knob of butter | |
| half teaspoon salt | |
| pepper | |
| 50g/2oz grated cheese | |
| 1 teaspoon of mustard | |
| 2 cauliflowers |
- Chop can boil the cauliflour in a pan of salted water
- Mix the flour to a smooth paste with a little of the cold milk
- Warm the remaining milk and pour onto the paste, mixing well
- Return to the pan and continue to cook (stirring continuously) until the sauce comes to the boil and starts to thicken
- Stir in the grated cheese and mustard
- Continue stirring until the cheese has melted
- Pour sauce over the cooked (and drained) cauliflour
- Season with black pepper.
