Pasta alla Puttanesca

Pasta alla Puttanesca is a traditional pasta dish is from Naples, an historical and vibrant city in southern Italy. This dish if famed for it’s name which translates as “Pasta the way a whore would make it”, while there are many theories why it is named as such the most likely that I have heard is that it is a quick, cheap yet tasty meal that could easily be prepared by Napoli’s ladies of the night!

Ingredients: One lb. of Pasta (I use Spaghetti)
  3 tablespoons of Olive oil
  2 - 3 Cloves of Garlic (I use 3 but I like garlic!)
  1 dried red pepper (or red pepper flakes)
  1 onion chopped
  1 can of Italian Plum tomatoes (28 ounze can)
  16 black olives
  Tomato paste
  2 tablespoons of capers
  One can of anchovies (chopped)

To prepare this dish:

  • Chop the pepper, onion and the garlic and set aside for later
  • In a frying pan, heat the olive oil.
  • Once its hot, fry the red pepper and the garlic.
  • After a minute or so, add the onion
  • As the ingredients are frying, chop the olives and the anchovies.
  • After a few minutes of frying, add the olives, anchovies, capers and tomaot paste
  • Next add in the tin of tomatoes (break them up a bit)
  • Cook for twenty to thirty minutes until the mixture reduces down.
  • Serve on the spagetti, top with some parmesan for that authentic tate!

This is a quick and easy meal, perfect after a hard day at work!
