Spanish Tortella
Tortella (pronounced torteeya) is one of the most popular recipes amongst Spaniards. It is relativly simple to make yet tastes really good, especially with spicey tomato sauce or served in a sandwich (bocadillo). Tortella is basically an egg and potato omlette, if you plan on trying just one Spanish recipe then I suggest this is the one that you should try firts, its delicious.
| Ingredients: | 500g (16 oz) of finely sliced potatoes |
| One large onion (chopped) | |
| 5 eggs | |
| Olive oil |
- Pour a few inches of olive oil into a pan and heat
- Add the finely sliced potatoes and onions and fry foe a few minutes until the potatoe is cooked (may have to do this in a few batches)
- Once finished remove from the oil into a large bowl.
- Beat the eggs and season with salt and pepper
- Mix the egg in with the potatoes in the bowl.
- Put a few tablespoons of oilve oil into a small (but deep fring pan)
- Add the egg mixture and heat for 6 or 7 minutes until the base is golden brown
- Next place a plate over the frying pan and tip upside down
- Slide the omlet off of the plate and back into the pan to cook the other side
- Cook for a further 6 minutes or until the base is golden brown.
- You can serve with a rich spicey tomatoe sauce (1 tin tomatoes, 3 galic cloves, a couple of chillies and a teaspoon of purée)
