Wiener Schnitzel
| Ingredients: | 4 pieces of veal fillet, each around 150grams (6 oz) |
| 4 tablespoons of flour | |
| 1/2 teaspoon of salt | |
| 1 large egg beaten | |
| 8 tablespoons of fine white bread crumbs | |
| 75g/3oz of butter | |
| Olive oil | |
| 4 slices of lemon and capers (2 teaspoons) |
- Beat each piece of veal until extremely thin.
- Nick Edges with scissors (prevents meat from curling up)
- Toss in flour seasoned with salt
- Dip into beaten egg and then coat with the bread crumbs
- heat the butter and olive oil in the frying pan
- cook 1 or 2 pieces at a time, frying for 8 -10 minutes (turning once)
- drain on soft kitchen paper
- Serve on warm dish, garnish with sliced lemon and capers
