Wiener Schnitzel

Ingredients: 4 pieces of veal fillet, each around 150grams (6 oz)
4 tablespoons of flour
1/2 teaspoon of salt
1 large egg beaten
8 tablespoons of fine white bread crumbs
75g/3oz of butter
Olive oil
4 slices of lemon and capers (2 teaspoons)
  • Beat each piece of veal until extremely thin.
  • Nick Edges with scissors (prevents meat from curling up)
  • Toss in flour seasoned with salt
  • Dip into beaten egg and then coat with the bread crumbs
  • heat the butter and olive oil in the frying pan
  • cook 1 or 2 pieces at a time, frying for 8 -10 minutes (turning once)
  • drain on soft kitchen paper
  • Serve on warm dish, garnish with sliced lemon and capers
